    Some days, all I need is a simple pasta dish for lunch. Gemelli is one of my favorite types of pasta, and find it goes great with pesto sauce. I love how the sauce gets stuck inside the little twists!     I am so excited to share this vegan butter chicken recipe with you today. The name is a little misleading, because there is actually no chicken in this recipe – it is a vegan version of Indian butter chicken. I just couldn’t find a better way to describe it, because it isn’t really a curry, but more like a butter chicken sauce. Butter chicken is made with a delicious spiced tomato sauce.     Some days you just need something easy for lunch. The other week I shared my homemade dukkah recipe, and it tastes great on top of avocado toast! Another reason I love always having some on hand in my spice rack.
