Wow, where did the weekend go? It went by really fast for me. Here we are at Monday again, so I wanted to post a little #meatlessmonday inspiration for you! I love making cabbage rolls, and it is really easy to steam them in the Thermomix® (and make the filling as well!). I used a recipe on Cookidoo® as my base, but changed a lot of things. I took out the meat completely and used mushrooms to make this a vegan recipe, and instead of rice I used quinoa. They turned out really flavorful!⁠

Happy Sunday! Today I am sharing one of my FAVORITE no bake cookie recipes. These are vegan and gluten-free, and only require 3 simple ingredients. I will only allow myself to make them once per week because otherwise I will snack them all day, they are super addicting! Enjoy 😗⁠

Ingredients:⁠
1 1/2 cup chocolate chips⁠
1/2 cup peanut butter⁠
3 cups corn flakes⁠
⁠
Instructions:⁠
1. Add the chocolate chips and peanut butter to a Thermomix® mixing bowl and melt at 120 F for 3 minutes on speed 3.⁠
2. Add the corn flakes and stir on speed 1 for 20-30 seconds, and use a spatula to finish mixing gently.⁠
3. Use a spoon to drop tablespoonfuls onto a baking sheet with parchment paper.⁠
4. Chill in the refrigerator for 30 minutes.⁠
⁠
Makes 12⁠ cookies⁠

Happy Saturday!! Sharing one of my favorite vegan oatmeal bowls today. I am obsessed with drizzling spoonfuls of almond butter on my breakfast bowls...anyone else? It is just so good. Almond butter goes so well with bananas, too! Here is the recipe for this vegan oatmeal bowl.⁠

Ingredients (for one bowl):⁠
1 cup almond milk⁠
1/2 cup oats⁠
2 tbsp almond butter⁠
Bananas⁠
Strawberries⁠
Hemp seeds⁠
⁠
Instructions:⁠
Cook oatmeal per Oatmeal recipe on Cookidoo® (Thermomix® recipe database) swapping the milk for almond milk or if you do not have a Thermomix® you can make it on your stove top.⁠
Top with fruit, almond butter and hemp seeds.⁠

I call this the healthy version of potato salad! I found this recipe on Cookidoo®, the Thermomix® recipe database, when I was browsing potato salad recipes to make for lunch one day, and I loved how it included more greens and fresh cucumbers and tomatoes. The green onion and parsley adds a lot of flavor, and toasted sesame seeds give this vegan main or side dish some delicious crunch. I made the dressing in my Thermomix®, which includes olive oil, balsamic vinegar, mustard, salt, pepper, and honey to sweeten things up a bit.⁠

Every April I get really excited for rhubarb season! It is just so beautiful... I love the different shades of green, yellow, pink and red. Rhubarb is naturally very sour, so you will need to add some kind of sweetener when baking with it (unless you like very tart/sour desserts 😉).⁠

I made this vegan rhubarb tart in my Thermomix®. The crust is made with olive oil, and it turns out very flaky if you pre-bake it (this is key to not getting a soggy crust at the bottom). The filling is made with coconut cream, fresh lemon, sugar and corn starch. You can sprinkle sugar on top of the rhubarb or brush it with your favorite jam flavor to sweeten it up!⁠

This vegan quinoa tabouli is a fresh, flavorful side or main dish! After cooking the quinoa in the Thermomix®, it comes together really quickly. Fresh parsley and mint are chopped, then some pistachios and half of a lemon in the Thermomix®. Toss together with fresh tomatoes, red onion, and any other mix-ins you would like.⁠

Comfort food looked a lot different for me 10 years ago. I was in college, eating slices of pizza and a cherry coke almost daily during study sessions at the library. Now, comfort food means the most nourishing, satisfying, colorful foods - like this plant-based dish of avocado slices, steamed broccoli, sweet potato fries and BBQ chickpeas. It is so filling and satisfying!⁠

Ingredients:⁠
1 can garbanzo beans, drained⁠
1/2 cup your favorite bbq sauce (I love to make homemade bbq sauce in my Thermomix® - there are many great recipes on cookidoo.thermomix.com).⁠

Instructions:⁠
Preheat oven to 375 F.⁠
Combine garbanzo beans and BBQ sauce in a baking dish and bake in the oven for 25 to 30 minutes.⁠
⁠
The longer you leave them, the firmer they will be...but don't burn the BBQ sauce when it starts boiling off...⁠

Flax egg and olive oil are the subs that make this carrot cake vegan, and it is super moist and delicious! I am not a huge fan of raisins in my carrot cake (weird??), so I usually leave them out and add extra nuts (walnut and pecans). The spices in this cake always make my house smell amazing. I made this vegan carrot cake in my Thermomix®.⁠

My 5 year old made these bunnies in our Thermomix® and we had some much fun shaping them and using chocolate chips for the eyes and nose! This is a no-rise bread recipe, since it uses quark (or Greek yogurt is also fine). Easy fun recipe for the kiddos 😉 We will make more today to decorate our Easter breakfast table tomorrow!⁠

When my team was looking for Easter recipes in the Thermomix® recipe database to show during our Spring Cooking Class a few weeks ago, we found this Italian Easter Bread recipe. The really cool thing about this recipe is the eggs cook with the bread in the oven! Then end result is little egg nests. ⁠

When you search on Google, you will find that the breads are usually decorated with sprinkles. Such a fun idea for Easter, and I am sure the kids would love it that way too. An alternative is to use pearl sugar, since the bread is meant to be a sweet, fluffy, brioche type of bread.⁠
⁠
Dye the eggs UNCOOKED using vinegar and food coloring or natural dye (Thermomix® just released a new collection in their recipe database that shows you how to make a variety of colors naturally - so cool!). Then, once the dough has risen, braid them into nests and place the eggs in the center before baking in the oven. These make the perfect breakfast on Easter morning, and you can make them ahead of time and warm them in the oven from the refrigerator.⁠

Happy Friday! Time to celebrate with a special cocktail 🍸 Today I am sharing what I like to call "adult lemonade" since the base is homemade lemonade that I made in my Thermomix® with fresh organic lemons, sugar, water and ice, but it is topped with @empress1908gin. This gin is special to me, because it is actually inspired by the famous and beautiful Fairmont Empress Hotel in Victoria, which is where my husband and I stayed during our last vacation together before our girls were born.⁠
⁠
If you haven't tried it, Empress 1908 is micro-distilled in small batch copper-pot stills using 8 botanicals: juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms and Fairmont Empress Blend Tea (so delicious!).⁠
⁠
One of my favorite things about this gin is the COLOR. It is so gorgeous right? The indigo hue is naturally from the butterfly pea blossom, and it magically transforms from indigo to a soft pink as you add tonic to it. ⁠
⁠
Here is the recipe:⁠
⁠
2 oz Empress 1908 Gin ⁠
1 oz Lavender Honey Syrup⁠
2 oz Homemade Lemonade⁠
⁠
Shake homemade lemonade and lavender syrup on ice and add it with crushed ice to a glass.⁠
Pour Empress 1908 Gin on top and add more crushed ice.⁠
Garnish with lemon slices and lavender sprigs.⁠
⁠

Happy April! Today I'm sharing my favorite chocolate olive oil cake recipe to 🎉 celebrate 🎉  my 1 year anniversary with @thermomixusa! I'm so grateful for the opportunity to be a consultant on this team of incredible, passionate foodies & for all of the people I've met during the past year working as a consultant 💚  Thermomix is not just another kitchen appliance, it is a fun, supportive community of people who love food. Not to mention it is an amazing kitchen assistant. I've had so much more time with my family, and our food waste had dropped from using the meal planning / grocery shopping feature!

This vegan chocolate olive oil cake is so moist & healthier without the butter or inflammatory vegetable oils (I promise you won't miss them at all!). I used a coconut cream ganache, crushed pistachios & freeze dried raspberries to decorate.

🌟 SAVE FOR LATER!

*Makes one 9" round cake pan; I used two 5" rounds

Ingredients:
3/4 cup unsweetened cocoa powder
3/4 cup brown sugar
1/2 cup granulated sugar
1.5 cups all-purpose flour
1/2 tsp salt
1.5 tsp baking soda
1.5 cups water
1 tbsp apple cider vinegar
1 tsp instant coffee
1/2 cup olive oil
1 can coconut milk (full fat, not light!)
1 cup semi-sweet chocolate chips (or you can crush a chocolate bar in the Thermomix®)

Instructions:
Preheat oven to 350F.
Add all ingredients except coconut milk & chocolate chips to Thermomix®. Blend on speed 4 x 1 min.
Transfer to greased pans & bake x 30 min.
Cool on a rack.
Add coconut cream & chocolate to a Thermomix® & heat to 120F x 3 minutes on speed 3.
Transfer to a bowl and set in the fridge for ~30 minutes (depends on how shallow your bowl is, can put in the freezer for less time but keep a close eye!).

This flavorful salad is packed full of vitamins with red cabbage shredded in the Thermomix®, arugula, kale, feta cheese and dried figs. My favorite part about this recipe is the dressing, mixed in the Thermomix® and made with maple syrup and white balsamic vinegar.⁠

I don't know about you, but I like some sweet in my salad - so in addition to the sweet dressing, the dried figs are so perfect! This colorful salad makes a healthy lunch at home or on-the-go.⁠

This recipe turned out sooo good! I used sliced sweet potatoes, potatoes, red beets and radishes and steamed them in my Thermomix® first before arranging them and baking in the oven. A creamy garlic herb sauce and cheese is drizzled over the top just before baking, but if you want to make this vegan friendly you can use a cashew cream based sauce and vegan cheese (or skip!). Thyme adds so much flavor to this colorful, healthy dish!⁠

Crispy tofu tossed in a hot sweet and sour sauce with veggies served with rice noodles .... YUM! Perfect vegan dish for meatless Monday, and you can use it for meal prep too. Just reheat the tofu in the oven and sauce can be reheated too (I like to toss it all in my Thermomix and use reheat mode).

I bake my tofu until crispy instead of frying, and I make the sweet and sour sauce in my Thermomix since it chops and cooks all in one bowl 💚

Happy Sunday 😊 This smoothie is made with mango, pineapple and almond milk for the base, and strawberries and bananas added in to make the top. The colors are so pretty and remind me of a sunrise!
