    Vegan Chocolate Coconut Cream Tart

I feel really good about this tart because it is MOSTLY healthy! The gluten-free crust is made of almonds, oats, dates, maple syrup, almond butter and coconut oil. The ingredients are so simple and heathy for you! The filling is made with chocolate chips melted with coconut cream. I have been having fun with my new tart pan making different fillings, and this is one of my favorites so far. The melting point of chocolate is 90 degrees F, and you do not want to go much higher or you can burn it and it will taste awful. Also, do not let any water get into your mixing bowl because it…

    Strawberry Jam

My favorite jam flavor is strawberry! I love it on everything: pancakes, bagels, toast, even cereal. Ever since I got my Thermomix®, I have been making jam all of the time because it is super easy and comes out perfectly every time. Guess what? You can make delicious jam WITHOUT pectin. There is pectin naturally found in fruit, and usually it is used with fruits with a low pectin content. By lowering the pH using lemon juice, the pectin in the fruit with naturally form bonds the same way as if you were to add pectin to the jam. In this simple strawberry jam recipe, I do not use pectin.…

    Chocolate Oatmeal

On the weekends I like to treat myself and my family to a special breakfast. I try to think of something new every weekend, but also have a lot of delicious recipes in rotation. This chocolate oatmeal recipe is a family favorite, and goes great with fresh berries. The berries add a cool, refreshing taste, especially in the summertime! Oatmeal is really easy to cook in the Thermomix®, and I love that I can make different varieties by adding different ingredients. One time I made an apple maple pecan oatmeal, another I made peaches and cream, and one of my other favorites is blueberry cinnamon. The oatmeal possibilities are endless!…

    Strawberry Rhubarb Tart

The combination of fresh strawberries and rhubarb has always been a favorite of mine. I recently bought this tart pan and this strawberry rhubarb tart was the very first tart I baked in it. It has a removable bottom piece, so it came out very easily and in-tact! For this tart recipe, I created a gluten free, dairy free, vegan crust. I mostly wanted to make a crust without butter, and try to make it healthier. That led me to using almonds and oats for the “flours” and dates and coconut oil to hold the dough together. For the filling, I used a basic crème pâtissière, but if you want…

    Cauliflower Fried Rice

Forget take-out and make this super simple, delicious and healthy cauliflower fried rice in under 20 minutes! Keep it vegan or add scrambled eggs or chicken for protein. Cauliflower alone is very plain and does not have a strong taste. In this recipe, it is first “riced” and then fried in oil and flavored with garlic, liquid aminos (a substitute for soy sauce) and sesame oil. To rice the cauliflower, I use my Thermomix®. You can literally throw a head of cauliflower into it and it will rice it in 4 seconds flat. Impressive! If you do not own one, you can use a food processor. There is a debate…
