It has been warming up here in Tahoe 🌞 My girls have been asking to make popsicles, so the other day we made some using the Frozen Breakfast Yogurt Pop recipe on Thermomix. It uses almond milk and maple syrup to sweeten the fruit, and this time we added mango, raspberry, and blackberry. So yum!

Healthy, sticky, delicious date caramel (vegan + g

Healthy, sticky, delicious date caramel (vegan + gluten free) - made in my Thermomix 💚

Dip it in chocolate, top overnight oats, stuff it in brownies, or eat it by itself 🤭

Ingredients:
18 dates, pitted
1/4 cup boiling water
2 tbsp almond butter (optional)

Use a blender (I use my Thermomix TM6) to chop the dates to small pieces (pulse a few times), then scrape down and add almond butter. Blend on high speed while adding the hot water. You'll need to scrape and blend a few times until you get a creamy texture. It should be sticky and smooth like caramel when done!

I made this cake for Easter, and its so much fun. I used a basic yellow sponge cake (made in my Thermomix) and topped it with vegan coconut whipped cream from the store (you can also make it from scratch with coconut cream) and sliced apricots and glaze. 😋

More chocolate eggs! This time we made date caramel chocolate eggs. I think I like them better than the traditional peanut butter eggs!!

Date Caramel:
8 dates, pitted
2 tbsp hot water
2 tbsp almond butter

Blend it up into a paste in the Thermomix, scraping with a spatula and repeating. It should be a caramel texture in the end.

Melt chocolate chips and spread into a silicone egg mold, then fill with a scoop of date caramel and cover with chocolate.

Pop in the freezer for 5 min.

Vegan Chocolate Peanut Butter Eggs

This healthy version (don't let healthy fool you, they're amazing!) is a fun Easter treat for the kids. I make large batches with my Thermomix since it melts the chocolate perfectly.

All you need is these ingredients:
1 cup creamy peanut butter
4 tbsp coconut flour (firms it up and adds texture)
2 tbsp maple syrup (adjust for sweetness)
Chocolate chips

and some egg silicone molds!

Pop them in the freezer for a few min to harden the chocolate 🍫
