    Chocolate Nut Butter Balls

The other day I made this delicious triple nut butter from scratch, and ever since I have been craving chocolate nut butter balls! This confection is the perfect mid-week pick-me-up. Although dangerous, I enjoy having a bowl of them in my refrigerator to grab when I need to indulge! I stopped buying store-bought peanut butter cups at the store a long time ago, and started making my own version at home since it is so easy and there aren’t any yucky preservatives. Instead of making cups, I just dip frozen rolled up nut butter in chocolate to keep things simple. I use my homemade triple nut butter which has almonds,…

    Straciatella Nice Cream

Did you know that straciatella is different from chocolate chip? There is sort of an art to making straciatella ice cream (or in this case, nice cream using bananas!). Instead of adding chocolate pieces to it, you slowly drizzle melted chocolate that gets frozen in pieces or swirls inside of the turning ice cream. It is super delicious! All you need to make straciatella nice cream is: frozen bananas and chocolate chips. I use my Thermomix® TM6 to make it, because the motor is so powerful and my nice creams come out creamy without being melted and drippy every time! Serve your nice cream right away for best results. Strawberry Nice Cream

What is your favorite nice cream flavor? My whole family loves nice cream, and strawberry is one of our top favorites. If you have not tried nice cream before, it is similar to ice cream except instead of heavy whipping cream, frozen bananas are used to make a creamy base. Then, it is flavored with any flavorings you want! The key to perfect nice cream that doesn’t turn out to be a drippy mess is frozen ingredients and a good appliance. I have used a few different blenders/appliances to make nice cream, and hands down the Thermomix® is the best – it is a beast! The motor handles the frozen…

    Vegan Chocolate Coconut Cream Tart

I feel really good about this tart because it is MOSTLY healthy! The gluten-free crust is made of almonds, oats, dates, maple syrup, almond butter and coconut oil. The ingredients are so simple and heathy for you! The filling is made with chocolate chips melted with coconut cream. I have been having fun with my new tart pan making different fillings, and this is one of my favorites so far. The melting point of chocolate is 90 degrees F, and you do not want to go much higher or you can burn it and it will taste awful. Also, do not let any water get into your mixing bowl because it…

    Strawberry Rhubarb Tart

The combination of fresh strawberries and rhubarb has always been a favorite of mine. I recently bought this tart pan and this strawberry rhubarb tart was the very first tart I baked in it. It has a removable bottom piece, so it came out very easily and in-tact! For this tart recipe, I created a gluten free, dairy free, vegan crust. I mostly wanted to make a crust without butter, and try to make it healthier. That led me to using almonds and oats for the “flours” and dates and coconut oil to hold the dough together. For the filling, I used a basic crème pâtissière, but if you want…
