    Almond Butter Oatmeal

In the past, I enjoyed cooking complicated breakfasts. It couldn’t just be plain old oatmeal or cereal, but an egg frittata with a side of whole grain pancakes and fruit. These days, it seems like the mornings are much easier when starting with a simpler breakfast. This almond butter oatmeal is one of my favorites, mostly because of the toppings – sliced apple, pecans and a drizzle of almond butter. Quick oats are easiest to use, since they cook very fast! You can use your favorite plant-based milk in place of milk or water. Oats are a healthy food because they give lasting energy and are a good source of…

    Spinach Goat Cheese Egg Muffins

Whenever I make these egg cups, they go very quick! They are so delicious. You only need a few ingredients and a muffin pan to make them. You don’t need paper liners, because you can just grease the muffin pan itself with butter, olive oil or cooking spray. These spinach and goat cheese egg muffins are great for breakfast, brunch or having some in the refrigerator for a quick snack. This breakfast recipe is even easy for my toddler to make. I add all of the ingredients to a bowl and she mixes for me. The entire recipe takes about 20 minutes from start to finish. What other ingredients would…

    Mini Acai Bowls

Lately my toddler and I have been spending a lot of time in the kitchen. She loves having “cooking lessons” from me, and we enjoy decorating the food we make for dad. I recently bought some stainless steel food “cookie cutters” so we can make different shapes out of vegetables, fruits and breads. These shooting star acai bowls are a great, healthy way to start your day. I decided to make them mini to lower the sugar content. To get a thick consistency, almost all of the ingredients need to be frozen. You can likely find acai purée packets near the frozen fruit in the freezer section of your grocery…

    Mom’s Power Muesli

I can eat this chocolate pecan muesli every day and never get tired of it! It gives me so much energy that lasts, and the power I need for a good start on my day. For my homemade muesli, I use organic rolled oats, ground flax seeds, dark chocolate chips, pecans, and sometimes I add cranberries or raisins, chocolate corn puffs or rice cereal, and cacao nibs. Almond milk is my favorite liquid to add, but you can use any milk you want or even a dollop of plain yogurt on top! Finally, I top it off with fresh berries and bananas. Having a baby is funny. You get into…
