In the past, I enjoyed cooking complicated breakfasts. It couldn’t just be plain old oatmeal or cereal, but an egg frittata with a side of whole grain pancakes and fruit. These days, it seems like the mornings are much easier when starting with a simpler breakfast. This almond butter oatmeal is one of my favorites, mostly because of the toppings – sliced apple, pecans and a drizzle of almond butter.
Quick oats are easiest to use, since they cook very fast! You can use your favorite plant-based milk in place of milk or water. Oats are a healthy food because they give lasting energy and are a good source of iron and fiber.
Almond Butter Oatmeal
- 1 cup quick oats
- 2 cups milk, plant-based milk, or water
- 1 tbsp almond butter
- Add the oats, almond butter and milk to a small pot and bring to a boil.
- Turn down the heat and simmer for 5 minutes, stirring occasionally.
