    I could eat sweet potatoes every day and never get tired of them. Usually I switch the flavors around, from sweet to savory. In this oven-roasted sweet potato recipe, I use garlic powder and hot Hungarian paprika for a little kick. The black beans add a nice source of fiber, and the egg some extra protein. Avocado adds healthy fats. This is a great vegetarian dish for lunch or dinner, and goes well with any salad as a side.

Vegan Pear Tart This Mother’s Day, spoil the sp Vegan Pear Tart

This Mother’s Day, spoil the special women in your life with this vegan pear tart paired with @T2tea Jasmine Pear loose leaf tea! The two pair perfectly together for a special brunch or afternoon tea. The Jasmine Pear tea is a smooth green tea mixed with delicate jasmine & crisp pear notes. It's so delicious and my favorite tea from T2 I’ve tried so far! I love green tea. This pear tart is made with a coconut oil-based crust, filled with vegan vanilla custard made with an almond milk base, topped with pear slices shaped into roses that look like a bouquet.

Ingredients:

1 ½ cups all-purpose flour

½ cup coconut oil, room temperature

2 tbsp powdered sugar

6 tbsp cold water

2 cups vanilla almond milk

½ cup coconut cream

1 tsp vanilla extract

¼ cup cornstarch

⅓ cup sugar

Pinch ground turmeric

2 pears

2 tbsp lemon juice

1 cup water

¼ cup brown sugar

1 scoop T2 Jasmine Pear Loose Leaf tea

Instructions:

1. Add flour, coconut oil, powdered sugar, and water to a food processor & blend.
2. Roll dough into a circle & press into a tart dish. Chill until ready to use.
3. Add almond milk, cream, vanilla, cornstarch, sugar, and turmeric to a pot and bring to a boil, then turn down low for 10 minutes.
4. Slice the pears into thin slices & add to a bowl of water mixed with brown sugar & lemon juice.
5. Steam slices for 5 min.
6. Brew tea according to package directions and set aside.
7. Pour the custard into the tart shell.
8. Preheat the oven to 425 degrees F (220 degrees C).
9. Layer 5 pear slices overlapping about halfway on each other & then roll up into a rose. Place the roses onto the custard and brush with T2 Jasmine Pear Loose Leaf tea.
10. Bake x 10 min, then lower the heat to 325 degrees F (160 degrees C) and bake for another 30 minutes. Cover the top with foil to prevent overcooking the pears.
11. Remove from oven & cool. Chill x 2 hours, then sprinkle with powdered sugar.

Chocolate Almond Butter Muffins w Cinnamon Almonds

Ingredients:
2 bananas
¼ cup maple syrup
2 tbsp Burroughs Family Farms olive oil
¾ cup Burroughs Family Farms almond butter
2 flax eggs
¼ cup cocoa powder
½ tsp baking powder
¼ tsp baking soda
Pinch of salt
½ cup Burroughs Family Farms Organic Cinnamon Almonds, crushed

Instructions:
1. Preheat oven to 350 F.
2. Add all ingredients to a blender except almonds, blend ~30 sec
3. Gently stir 1/4 cup crushed almonds into batter, then divide in muffin pan.
4. Swirl 1 tbsp almond butter & sprinkle almonds.
5. Bake x 15 min
