    Whenever I make these egg cups, they go very quick! They are so delicious. You only need a few ingredients and a muffin pan to make them. You don’t need paper liners, because you can just grease the muffin pan itself with butter, olive oil or cooking spray. These spinach and goat cheese egg muffins are great for breakfast, brunch or having some in the refrigerator for a quick snack. This breakfast recipe is even easy for my toddler to make.     Peach Tomato Bocconcini Salad

    This super simple salad reminds me of summer. When peaches are not in season, I sometimes use peaches in a jar. All you need for this easy salad is peaches, cherry tomatoes, bocconcini (little mozzarella cheese balls) and balsamic glaze. I always have store-bought balsamic glaze in my pantry, because I use it often, but you can also whip some up at home in less than 20 minutes using balsamic vinegar and honey or brown sugar.
